Blanc de noir rosé w a pale flesh pink colour. A sophisticated
rosé that is fine textured, w warm full palate and a long
dry finish. Holystone is a speciality of T’Gallant –
using the same techniques as the Champenoise whereby the pinot noir
grapes are gentle whole bunch pressed to released the pale juice,
then fermented as a table wine...$14

Romeo Muscat Blend 2002
deeply aromatic, a blend of three important varieties grown in Alsace~
muscat, pinot gris and blanc de noir. Aroma is generous rose petal

Celia's White Pinot 2003
we don’t know of anyone else in Australia making this sort
of wine. The pale pink juice of Pinot Noir left to ferment and then
rest on its yeast lees in barrel. Most of the colour is absorbed
over the year onto the lees, and the wine becomes a rosé
gold colour. Celia is a beautiful, seamless and well-proportioned
wine with a complex nose. Enjoy a bottle with roast lamb or cheese...
